BAMT Sandwich

Are we all in agreement that it’s been far too long since bacon has graced the pages of this here blog? I’m sorry, bacon! Can we still be friends? My poor favorite ingredient has been sorely neglected in recent months, but it is back and better than ever.

 

This past weekend, I spent some time with my bay area food bloggers crew for a little educational session and, of course, a potluck. You guys, some advice…if you’re ever questioning what to take to a potluck, just take something with bacon in it…duh! I made one gigantic sandwich and cut ip up into smaller bites. It was super easy and a total crowd pleaser. Here’s how it’s done…

Bacon Arugula Mozzarella Tomato Sandwich

You will need:

1 large loaf ciabatta (or focaccia) bread

1 cup mayonnaise

3 tablespoons pesto (fresh or store bought)

2 balls of fresh mozzarella (about 4 oz. each), thinly sliced

2 cups arugula

2 pounds bacon, cooked

2 large tomatoes, thinly sliced

 

To prepare:

1. Slice the ciabatta loaf completely in half lengthwise, and lay each half side by side with the crust side down. Use your hands to scoop some of the excess bread out of the mounded top half of the bread.

2. Combine the mayonnaise with the pesto. Spread the mixture liberally on the top half of the bread, and top with the sliced mozzarella.

3. On the bottom side, spread the arugula across the whole surface, then top with the bacon and the tomatoes.

4. To finish, flip the top half with the pesto and cheese onto the bottom half. Cut into as many pieces as you need.

 

Makes about 12 hors d’oeuvres size sandwiches.

          Yes!! Would LOVE to grab a drink there!! I’m traveling like crazy for the next two weeks, but mid-May on is looking pretty open. Maybe like May 14th or 23rd?

      Exactly! Easy to cut up into small bites! Then you can eat a few and pretend like you didn’t just eat a huge bacon sandwich 🙂
