Watermelon Feta Mint Skewers

While we’re on the subject of skewers, here is another must try. This one is so gosh darn easy. So gosh darn refreshing. And so gosh darn pretty. Yes, it’s ok to eat or make food just because it’s pretty. It’s even ok to just stare at the pictures and pretend like you’re going to make it someday. Um…I’m pretty sure that’s mostly the premise of Pinterest, right?

Watermelon Feta Mint Skewers


  • half of one small seedless watermelon, cut into cubes
  • 8 oz feta cheese, cut into cubes
  • 12 mint leaves, 1.5 to 2 inches long each
  • 12 skewers or toothpicks
  1. Prepare an assembly line with the ingredients.
  2. Skewer the watermelon first. Then add the mint, folding the leaf in half before skewering. 
  3. With the feta cube sitting on a flat surface, poke the skewer into it so the whole skewer remains standing.  (It’s important that the feta be at room temperature. If it’s cold, it may split in half when skewered).
  4. Repeat with the remaining ingredients. Best served at room temperature.

     Makes 12 skewers

 PS…I’m still in a little bit of shock, but somehow I managed to talk Kevin into another 
NYC trip this August. I’m super excited to check out this, and…breath, breath…
I get to see THIS again. Cannot. Wait.
